SOUTH AMERICAN INSPIRED VEGGIE BURGERS

 Black Bean & Quinoa Spiced Surinaamse Massala Burgers

Last weekend we had our first home cooked meal in our new home & wow was it amazing!

My boyfriend and I love a good burger night so we got a meat burger for himself & together we made up a pretty delicious vegetarian option for me which I couldn’t not share.

Sharing is caring after all & I know my fellow veggie burger lovers are going to love this one!

 

Recipe:

250g of cooked black beans (washed & drained)

100g of uncooked quinoa

1 large red onion/ 1 garlic clove (finely diced)

2 TBSP of mixed pine nuts, sunflower seeds & pumpkin seeds

Olive Oil

Spices –  surinaamse masala (or garam masala if you can’t find surinaamse),

chilli flakes, cilantro, sea salt & pepper to taste.

Method:

Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.

Roughly mash the black beans with a fork or masher leaving some whole black beans in a paste-like mixture.

Heat the olive oil in a skillet & saute the red onion, garlic with a sprinkle of cilantro, chilli flakes, sea salt & pepper.

Leave to cool.

Combine the quinoa, black bean mixture,  sauteed veggies & spices in a large bowl using your hands.

Add the masala (I added quite a bit of this) , some more sea salt & pepper & taste test! Add more spices if you are feeling adventurous.

Leave the mix in the fridge for 10-15 minutes.

Finally form the mixture into 5-8 patties (depending on the size you want).

Cook the patties in a hot oil frying pan until heated through!
