Raw energy bites of pure bliss!
Let me tell you a quick tale of how these salted caramel/peanut buttery balls graced my kitchen.
If you follow me on Instagram you will know that I have a bit of an obsession with peanut butter (just a tad) especially with ManiLife. Their deep roasted peanut butter is simply heaven in a tub & honestly I do not go a day without a spoon of Mani in my life! Their mission to create a peanut butter that is enjoyed like no other is a mission completed to me!
As the story goes whilst gallivanting in Wales last week I ventured into Holland & Barrett (simply looking for almond butter) when I saw it. The ultimate chocolate of chocolates!
All hail Loving Earth.
I’ve only ever seen it through a screen! It’s always been just a simple thumb tap from the other side of the world whilst scrolling through Instagram but now it’s mine! I should probably add here that Loving Earth is a raw organic chocolate brand from Australia with the greatest respect to our planet & environment. Being from Australia you can only imagine the shipping costs to get the goods into my grasp. Yes! I have tried but unfortunately my bank account isn’t the biggest down under chocolate fan but with their three main principles being Healthy – Sustainable – Fair I knew that one day we would eventually cross paths!
So there we have it, me, my ManiLife deep roasted peanut butter, a smile as big as my face with my loving earth chocolate, a can of chickpeas, a selection of spices & voila!
My creative spark in the kitchen has outdone itself!
What you’ll need (serves around 10 balls) –
250g of cooked chickpeas (washed & drained)
2-3 large TBSP of ManiLife deep roasted peanut butter
(If you haven’t got ManiLife you can use another peanut butter but I highly recommend getting yourself on Amazon & ordering it NOW!)
2 TBSP of maple syrup or honey
1 tsp of vanilla extract
Spices – cinnamon, nutmeg, touch of sea-salt. (I never measure spices – I use the best form of measurement – the taste test!)
Toppings – 45 g of Loving Earth salted caramel chocolate (or other dark salted caramel chocolate)
Add chickpeas, peanut butter, syrup or honey, vanilla extract, spices & sea salt to a food processor and pulse until well combined.
Roll the dough into around 10 balls.
Place the dough balls on a lined baking tray. Place in the freezer for 15 minutes.
Melt the chocolate on a low heat.
Coat the dough balls with the chocolate.
Place back in the freezer for 5 – 10 minutes.
