RAW GINGERBREAD BALLS

Anyone else feeling Christmassy already?! I’ve definitely spent most of November fighting the urge to put the decorations up. Living with a scrooge my whole life  (aka my dad) has taught me that it’s never too early when living in your own place & yup you may have guessed but I caved & our house is now a winter wonderland!

So with all of this festive spirit I thought I would be oh so generous & share my latest little creations.

You can call me Ella the Gingerbread Elf because these taste so yum!

Growing up I can remember my dad always buying me the little gingerbread men as a treat & as the festive season is coming around I’m finding myself craving  gingerbread. Now I am not the biggest ginger fan. Let’s just say me & ginger have a bit of a long story involving a shot, ginger & cayenne pepper & you could say my love for ginger has been somewhat tarnished ever since but I do love anything sweet & I guess nothing, not even a pure shot gone wrong, can takeaway one of my fondest childhood memories.

Since my lifestyle has changed my appetite has also gone through some major adjustments too & I simply find I crave wholefoods much more than 2013 Ella! I guess I have found what my body thrives off the most & that is pretty much all the colours of the rainbow & by that I don’t mean a packet of skittles 😉 No I’m talking the natural, grown from the ground kind – fruit & veg!

As you can imagine if I have the chance to turn something I love into a more balanced treat that is packed with nutrition & still tastes just as good, then of course I am going to jump right on it!

Recipe: 
3/4 CUP OF ROLLED OATS
1/2 CUP OF GROUND ALMONDS
150G PITTED DATES
TBSP OF COCONUT OIL
A HEAP OF CINNAMON, NUTMEG & GINGER
2 SQUARES OF DARK CHOCOLATE (CHOPPED INTO PIECES)
TBSP CHIA SEEDS

Method: 

Place all of your ingredients into a blender & whiz up until a dough is made. Roll the dough into balls & place in the fridge!

That simple! 

OPTIONAL (TOPPING) 

You can cover all or some of your gingerbread balls with dark chocolate melted (I used about 50grams of 80% dark chocolate) & a sprinkle of sea salt. You can also add goji berries & desiccated coconut or any topping you desire!
