ELLA’S VEGGIE BURGERS

Veggie burgers – what can I say I love them! I love making them & most importantly I love eating them!

I find with veggie burgers you really can go crazy experimenting with different ingredients & that is exactly what I did with these sweet potato, quinoa, sesame seed, & banana burgers. Yup I said banana in a burger. Call me mad but these were amazing & I honestly can’t believe I came up with such magic

Now please don’t diss until you try! Even I was a bit iffy about this one but the sweet potato, banana & quinoa actually blend together so well & the quinoa adds a real nice texture with a bite! I roasted the sesame seeds & some corriander seeds & wow did this make a huge difference to the taste. Roasted sesame seeds are incredible & remove the very sweet banana taste making these burgers a much more savory dish.

I promise if you love experimenting in the kitchen like me then these funky burgers are definitely a bit of you!


What you’ll need:

One large sweet potato
1/2 cup dried quinoa
1/2 cup rolled oats
1 banana
1 tsp Sesame Oil
2 TBSP of Sesame seeds
1 tsp of corriander seeds
1 TBSP cinnamon
1 tsp nutmeg
1 tsp garlic powder
Sea salt & black pepper – go crazy!

Method:

Preheat the oven to 200’c.
Roast the sweet potato in the oven until soft & you can remove the skin easily. Allow to cool.
While the sweet potato is in the oven cook the dried quinoa by covering with water & bringing to a medium boil for 10-15minutes.
Place the sweet potato without the skin, the banana, oats, sesame oil, and spices into a food processer and blitz until creamy & smooth.
Place the creamy mixture into a bowl & mix in the quinoa with a spoon.
Add your sesame seeds & corriander seeds to a dry pan under low heat until golden brown & add them to your mixture mixing well.
Feel free to add more spices if you want now too!

Leave the mixture in the fridge for around 30 mintutes to set.
Preheat the oven to 180’c.
Once the mixture is set shape into around 8 burgers, line on a baking tray & place into the oven for 30 minutes (turning halfway).

Serve with the remaining potato skins (if you managed not to eat them all while you were waiting!)

P.S Remember you can always freeze any extra burgers!
