Ella’s Vegetarian Poké Bowl Recipe

Poké Bowl is my newest foodie obsession! Poké is a traditional dish from Hawaii similar to sushi but mixed in a bowl of fresh healthy ingredients. Basically the Poké Bowl is a salad bowl with raw fish.

However, I actually don’t like raw fish & don’t eat fish at all anymore so my Poké is strictly veggie.

I first heard of Poké Bowl on YouTube but never had the opportunity to experience it – country girl problems! Being in Rotterdam has opened my eyes to the world of foreign cuisine & the AMAZING Poké Bowl. Ever since our first one to one encounter I have been obsessed with Poké & we now like to catch up at least once a week 😉

As much as I love a trip to Poké Bowl (which is practically on my door step) I decided to create my own version & couldn’t not share my little bowl of veggie heaven with you!

The Recipe:

Base – salad leaves of choice (Go crazy)

Protein – edamame beans  (125g)

Mix-ins – 125g of wakame, sweetcorn 125g, 1 small grated carrot

Toppings-  TBSP of black sesame seeds, 1-2 slices of cayenne pepper (according to taste)

Dressing – 1 large tsp of tahini & apple cider vinegar


Place all ingredients into a large bowl & enjoy!
