Time for another creative Sunday in the kitchen with me!
Since deciding to change my diet exactly one year ago this month & introducing a more plant based approach to my lifestyle my creativity in the kitchen has really unleashed. One of my fave things to eat is homemade vegetarian burgers & especially with the help of my Spanish sidekick. He has taught me how to mix flavours that work & create some serious magic in the kitchen so with his help we conjured up these little beetroot delights.
I try to keep all of my recipes as simple as possible & I can promise that these really are no different.
What you will need –
250 grams of chickpeas (washed & drained)
2 medium already cooked beetroots
1/2 red onion
1/4 cup of ground oats
Spices to taste – garlic powder, cumin, coriander, spicy paprika, chilli flakes, cinnamon, black pepper & sea-salt
Method –
– Place the chickpeas (washed & drained) into a food processor & blend until a dry mixture is formed.
-Finely chop the red onion & beetroot.
– Mix the chopped red onion & beetroot into chickpea mixture with your hands or with a spoon. (hands work best)
– Add the spices to your taste, followed by the ground oats & mix well
(again working with your hands is best)
Taste test – more cumin, paprika, cinnamon, whatever it is …. add it if you want!
Mold the mixture into even sized veggie burgers. (For this mix we got 3 servings)
Ella’s tip – You can double your mixture & freeze the leftovers!
