Dessert for breakfast anyone?!
This is for all my fellow carrot lovers out there….
Do you love oats?! Do you love sweet carrot cake?!
Well you came to the right place!
I’ve seen a lot of posts on Instagram recently about overnight carrot cake oats but cmon it’s too cold for that!
The smell of a nice bowl of hot carrot cakey oats straight from the oven sounds way more appealing to me!
I think my lovely Instagram besties agree too so I couldn’t not share with you this yummy breakie dessert!
What you’ll need
50g rolled oats
1 medium carrot (peeled, grated or chopped finely)
200ml almond milk
1 pitted date
TSP of vanilla extract ( 2-inch piece of vanilla bean)
TSP of organic honey
Cinnamon & nutmeg (to taste)
Roasted Sesame Seeds
1 pitted date
Extra carrot ( peeled & finely chopped)
Preheat the oven to 180 .
Put the oats, grated or finely chopped peeled carrot, almond milk, chopped date, vanilla, honey & spices into a small baking dish
or ovenproof bowl. (Make sure that the mix is covered with the almond milk – add more if needed). Place into the oven & leave to bake for 20 -25
minutes until the top is golden brown & the liquid has been absorbed.
Remove the oats from the oven & leave to cool.
To roast your sesame seeds you can dry fry them for a couple of minutes until golden brown.
Top your carrot cakey yumminess with the roasted sesame seeds, desiccated coconut, chopped pitted date & the extra carrot. You can also add more cinnamon or
whatever topping takes your morning desire!
